Baked Goodness.

It’s January so that means many are still trying to keep resolutions to eat healthier. It’s winter so that means many want to eat something warm. So something healthy & warm coming your way! Baked broccoli & cauliflower, tossed with lemon & cilantro juice…but that ain’t all folks. Tomatoes, garlic, & (hang with me…) capers. Lemme break this down.

Ingredients:

  • Broccoli
  • Cauliflower
  • Tomato
  • Garlic
  • Capers
  • Lemon
  • Cilantro
  • Red Pepper Flakes
  • Olive Oil
  • Butter (low fat)

So here is the lowdown: Preheat your oven to 400 degrees. In a baking dish, add your broccoli & cauliflower florets. Chop up some tomatoes if you please. Toss about 2 tablespoons of chopped capers in & mix around 2 table spoons of extra virgin olive oil. Mince in about 3 large garlic cloves. Toss all the goodness up. Chop about 3 tablespoons of butter & place butter pieces over of veggies. Sprinkle red pepper flakes atop. Once your oven has reached 400 degrees F, place the dish on a rack in the center if the oven. Bake for about 15 to 20 minutes, with an occasional stir mid-bake. While baking, mix 2 tablespoons of fresh lemon juice with 1/4 cup of freshly chopped cilantro. After the veggies are done baking, stir in your lemon-cilatron juice.

If you’re not counting carbs, make some 5 minute parmesan couscous while veggies are baking & place your veggie mix over. Finally, delight in this delicious dish. Afterward, pat yourself on the back for keeping to your “eat better” resolution!

*p.s. If you can’t handle the idea of capers, substitute for a few sprinkles of himalayan salt.
